Ingredients
  • 1.5 tbsp Thai red curry pasteThai Kitchen
  • 1tsp squeeze ginger
  • 1/4tsp red pepper flakes
  • 1 tsp cold garlic
  • 1cup coconut milk45 calorie by So Delicious
  • 1/4cup coconut oil
  • 1/3cup Just Mayocan substitute with 1/2 cup heavy cream
  • 1.5medium zucchini
  • 1/2medium red bell peppercan substitute with half green pepper
  • 1/2medium orange bell peppercan substitute with half green pepper
  • 2medium chicken breastsabout 2 pounds total
Instructions
  1. Chop chicken into desired portions. Chop vegetables accordingly.
  2. Brown chicken & brown in coconut oil; season with sea salt and pepper
  3. Remove chicken from pan once mostly cooked, preserving the chicken juices and coconut oil and add vegetables; cook vegetables over medium until tender
  4. Add garlic, ginger paste, curry paste, red pepper flakes & coconut milk; stir until combined. Add Just Mayo; stir until combined.
  5. Add chicken back to pan and simmer on med-low heat for 20 minutes
  6. Serve over your choice of broccoli, cauliflower rice or Miracle Rice & enjoy!
